What is a Microbiological risk assessment?
Microbiological risk assessment (MRA) is a structured process for determining the public health risk associated with biological hazards in a food. It includes hazard identification, exposure assessment, hazard characterization, and risk characterization. Based upon MRA, food safety management is shifting from hazard-based to risk-based management. From a MRA one can determine which risks are needed to control. An outcome of an MRA, for example, could be a challengetest or an heat deactivation study to verify the risk analysis. We work according to the MRA standards of the World Health Organization.
